What to do with a Zucchini?

We had a plethora of zucchini in our garden this Fall so I made everything from zucchini bread to stuffed zuchhini. I thought it might be fun to share a recipe. Stuffed Zucchini
1 pound lean ground beef 2 cups cooked rice 3 whole diced tomatoes 1 chopped green pepper 2 tbls chopped garlic 1 medium diced onion 1 Large zucchini , cut in half and hollowed 2 cups shredded cheddar cheese Directions: sautee the onion, green pepper and garlic. Then brown the ground beef and season with salt and pepper. Add tomatoes (give the tomatoes a good squeeze into the ground beef mixture before dumping). Combine the cooked rice and ground beef mixture and then spoon the mixture into the hollowed zucchinis. Sprinkle shredded cheese on top of the zucchinis and then wrap with tinfoil. Cook at 425 until zucchini is fork tender.

Mmmm! I made this with one of the first zucchini's we got this year and it was DELICIOUS!
